Apple rétes: a Hungarian break

Editorial selection · autumn 2026

Rétes is the Hungarian strudel tradition. Visit Hungary lists apple, sour cherry, poppy seed and sweet curd fillings: no single flavour defines it. For this autumn edition we suggest apple rétes as a break after the park. This seasonal pairing is an editorial choice; the pastry is available at other times and is not exclusive to Budapest. Ask the bakery about available fillings and ingredients, since the name alone does not identify allergens or variations.

A STORY AT THE TABLE · Bologna

Chestnuts: a story from Bologna’s Apennines

Editorial selection · autumn 2026

Bologna’s autumn food story also leads into the mountains. In Castel del Rio, Bologna Welcome describes the importance of chestnut groves to local communities, with the tree known as the “bread tree”. This belongs to the Apennine area around Bologna. For a seasonal break, look for chestnuts or marroni and ask about origin and preparation. Past festival editions do not confirm a 2026 event. Our suggestion is to explore the ingredient and its story without automatically adding a lengthy mountain trip to a day in the city.

Risotto alla milanese: the city’s yellow

Editorial selection · autumn 2026

Saffron risotto is one of Milan’s signature dishes. YesMilano describes its ingredients and tradition, including a tale of saffron added to rice for a celebration: this is a traditional story, not a proven historical origin. We suggest it for a warm lunch after autumn walks and museums; it is served throughout the year. Saffron provides the colour, while stock, butter and the finishing stir shape its texture and flavour. The official source also provides a recipe with quantities and method.

A STORY AT THE TABLE · Moscow

Shchi: cabbage in Russian cooking

Editorial selection · autumn 2026

Shchi is a Russian soup tradition, not a dish exclusive to Moscow. Dal’s dictionary, available through Culture.ru, describes versions with fresh or fermented cabbage, with meat or without it. For autumn, we suggest this food story after a park walk: a warm bowl reflects everyday ingredients and different ways of preserving them. There is no single universal recipe. If ordering it, ask about the stock and accompaniments; even a vegetable soup may use meat stock.
